Yields 8 eight ounce jars
Ingredients
- 12 cups peeled, chopped tomatoes
- 2 oranges
- 2 lemons
- 10cups sugar
- 2tbs whole cloves
- 6tbs broken cinnamon stick
Directions
- Slice oranges and lemons very thinnly and quarter the slices.
- Pour juice off of the tomatoes. Add sugar, and stir until sugar is dissolved.
- Add oranges, lemons, and spices which have been tied loosely in cheesecloth a bag.
- Place mixture over high heat and boil rapidly, stirring often. Cook for about 50 minutes, or until clear and thick.
- Pour into sterilised jars, seal firmly.
- Process in boiling water bath for 10 minutes.
