Yields 8 eight ounce jars

Ingredients

  • 12 cups peeled, chopped tomatoes
  • 2 oranges
  • 2 lemons
  • 10cups sugar
  • 2tbs whole cloves
  • 6tbs broken cinnamon stick

Directions

  1. Slice oranges and lemons very thinnly and quarter the slices.
  2. Pour juice off of the tomatoes. Add sugar, and stir until sugar is dissolved.
  3. Add oranges, lemons, and spices which have been tied loosely in cheesecloth a bag.
  4. Place mixture over high heat and boil rapidly, stirring often. Cook for about 50 minutes, or until clear and thick.
  5. Pour into sterilised jars, seal firmly.
  6. Process in boiling water bath for 10 minutes.
