Serves 4

Ingredients

  • 4 large seeded red capsicums
  • 500g peeled tomatoes
  • 4 medium onions
  • 2tbs salt
  • 2 cups white vinegar
  • 1.5 cups sugar
  • 1tbs
  • mustard seeds
  • 2tbs flour
  • 1/2cup water
  • 1/4tsp paprika
  • 1/4tsp turmeric

Directions

  1. Chop all of the vegetables finely, sprinkle with salt, and let stand foor several hours.
  2. In a large saucepan, combine vinegar, sugar and mustard seeds. Stir over a low heat until the sugar dissolves, then bring to the boil.
  3. Add vegetables and return to boil. Boil gently until vegetables are soft.
  4. Mix flour and spices into a smooth paste with the water. Add the paste to the chutney, stir until boiling.
  5. Reduce heat and simmer until chutney is a nice thick consistency.
  6. Pour into hot sterilised jars and seal.
